Spiced Banana Bread

Try out this allergen conscious spiced banana bread with chocolate chips for a delicious snack or crowd pleaser!

This banana bread a gluten free and dairy free and contains no refined sugar! Hope you enjoy as much as I do!

Ingredients:

Wet ingredients

3 large ripe bananas (mashed)

2 eggs

1/4 cup coconut oil

Dry ingredients

1.5 cups buckwheat flour

2 tsp baking powder

1 tsp ginger

2 tsp cinnamon verum

1 tsp nutmeg

1 tsp mixed spice

4 cardamon pods (crushed to powder) - (note: this creates a strong cardamon taste reduce to 2-3 pods to reduce cardamon flavour)

1/2 cup dark chocolate chips (i recommend 70-80% varieties, i love loving earth yum yum)

Method:

1 . Preheat oven to 160 degrees celsius

2 . Line small bread tin with chemical free baking paper

3 . In bowl combine all dry ingredients and mix well together

4 . In seperate bowl combine all wet ingredients and make sure banana is well mashed

5 . Create a well in dry ingredients and add wet ingredients mixing until well combine

6 . Place in baking tin and cook for 35 - 40 minutes until brown on top - poke with knife or skewer and ensure it comes out clean

7 . Allow to cool and enjoy!

Store in the fridge in an air tight container for up to 4 days.
