Green Pea Fritters
Ingredients:
2 medium zucchini (grated)
2 shallots (diced)
1/4 bunch coriander (diced)
1 cup green peas (thawed and gentled mashed)
1/2 cup brown rice flour
1 tsp baking powder
Pinch of salt
2 eggs
Method:
1. Combined all vegetables in a bowl and mix.
2. Add the flour, baking powder and salt, mix.
3. Add the eggs and mix well until all ingredients are combined.
4. Heat extra virgin olive oil on pan on medium heat, add 1 heaped tablespoon of mixture and cook for 3-4 minutes on each side. Repeat this step until all fritters are cooked. Reoil the pan as needed.
5. Serve and enjoy!
Serve hot or cold
Store in the fridge for up to 3 days
