LUNCH BOX RICE PAPER ROLLS

Ingredients:

500g chicken breast (diced)

1/4 purple cabbage (diced finely)

2 carrots (grated)

1 avocado (thinly sliced)

1/4 bunch coriander (or other herb of choice)

Chicken marinade:

4 tablespoon tamari

2 tablespoon coconut aminos

2 tablespoon sesame oil

Method:

1. Marinate the chicken and cook on medium-high heat until cooked through

2. Meanwhile, chop all the vegetables

3. Soften rice paper wrap under warm water for about 20-30 seconds

4. Put on plate and add the vegetables and chicken

5. Roll and repeat with remaining ingredients

6. Eat immediately or store in air tight glass container for up to 3 days in the fridge
