 Vanilla, Coconut and Raspberry Bliss Balls

A quick and easy low GI snack – simply prep and the beginning of the week and store in fridge.

I love this recipe because it is a delicious sweet treat but the combination of healthy fats, protein and low GI fruit means this recipe won’t lead to those highs in blood sugar levels and more sugar cravings. This is the perfect option for an afternoon sweet treat to keep your hormones in balance.

Low GI diets have been shown to be beneficial in conditions like PCOS and acne.

Ingredients:

 1 cup raspberries

1 cup macadamia nuts (or cashews)

1 cup shredded coconut

1/2 cup botanika blends vanilla cake batter protein

zest of 1 x lemon

1 tsp vanilla bean extract

1 tbsp coconut oil

1 tbsp rice malt syrup

Method:

1.     Place macadamia nuts and coconut to food processor and process until combined and crumb like mixture.

2.     Add remaining ingredients and process on low until well combined.

3.     Roll approx. 1 heaped tbsp. into bliss ball, repeat with entire mixture.

4.     Set in freezer for 30 minutes and then store in fridge.
